An Imperial Landing Ship or what?

Something that ILM didn't have the budget to build.;)
I assume the Imperials have some sort of large size landing craft similar to the Trade Federation ships. We just never saw them onscreen during the OT.
I wonder if the AT-ST's and AT-AT's folded up like the Battle Droids?

Great big parachutes.

IIRC, the EU has AT-ATs and AT-STs on barges that are sorta halfway between a giant piloted space flatbed and a collar.

In the video games they have the AT-ATs being transpoted in things that resembled the Battle Droid carriers in TPM. That's all I know about these things...

In Rogue Squadron 2 : Rogue Leader on Gamecube, they actually have big landing craft modeled in the background that's sort of busted open. It's nothing fancy, it basically just looks like a huge crate, but I thought that was a really imaginative touch for the game designers to throw in.

A few seconds earlier into that game, the "crate" is released from the belly of what looks like a modified Imperial Landing Craft. Kinda like the Tydirium but with no belly, just room for a removeable staging bay. Kinda neat, actually.
Action Fleet, where are you?
